We had a great first Christmas as Mr. and Mrs. this year. We had an amazing time spending it with family and friends. Hope you all had a great holiday as well. Thanks again Jordan for the amazing photos to remember our first married year.

Merry Christmastime Family, Friends and Followers!
We got the pleasure of working with Jordan Udhus Photography yesterday for some holiday photos since we didn't get many good photos out of our wedding. I want to thank our family and friends who took the sweet photos during our wedding again. Without you guys I really wouldn't have much to remember our day by!
But back to the point. Jordan is an amazing photographer, in 45 minutes we did about 200+ shots, and by the time I woke up this morning, I had a preview waiting for me in my e-mail inbox. Now this is what I call QUALITY work!

The note - About him
I found a note, written to me by my bestie, in 2005. It made me smile, because I know it is a prediction of my future husband. Who would have known that 6 years later I would marry this mystery man she was talking about? I kind of want to frame it, but that would just be weird!

Pictures of Things!
So I finally ditched T-Mobile and I have my husbands old phone. The best thing about it so far? I can play WordFeud (Scrabble) with my best friend...However, the next best thing is the photo editing capability! I am not so computer savvy with our editing program on the computer, and the one on my phone is way easier to operate. So here are some spruced up pictures! Enjoy!!
Not a whole lot to share right now, but these are a few. I wish I had more photos to share with you but our photographer is asking $500 for the disk and I am not sure if she is selling us copyrites with that or not. We have not seen all of the photos yet either, so at this point there are only about 18 useable photos from our wedding. I am amazed by how disappointing our service was, Guess I just have an excuse to renew our vows in Vegas down the road. :)
Oh also here is a priceless photo that our Aunty Jo captured during a family moment LOL

Wednesday Afternoon - Thank You?
Today I am hammering down and working on our thank-you cards. Sorry I am moving at a snails pace with them, I have a gigantuan slice on my thumb under my nail from the genius idea to give myself a paper cut on tin rather than paper. So needless to say, it is hard to write. So please bear with me, I promise to have them all finished by this weekend! Until then I want to thank everyone who attended, sent cards, gifts, texts, facebook messages, etc. for your thoughts and well wishes on our big day! We feel so loved and surrounded by the best friends and family anyone could ask for. Thank you, and love you all!

Mother Nature Attacks
Friday we went up to the property to visit, and to check out the destruction from the wind storm. We had some absolutely delicious homemade beef sausage from a friend of the family, and my-goodness was it yummy!
After a few hours of visiting we decided to go up and check out the destruction.

Thanksgiving Day
Here are the rest of our pictures. We got too excited halfway through to get pictures of everything - like me letting Patrick cook! hehe! Enjoy!
I got up first thing and made pumpkin pie. I basically followed the recipe on the pumpkin can, except with my ginger sensitivity I left that out, and I didn't have cloves so I used nutmeg. It tasted amazing and it didn't give me a tummy ache!
Heres the prep for my Rachel Ray Apple and Onion Stuffin Muffins. 4 Celery Stalks, 1 Medium Onion, 3 apples (the recipe calls for Macintosh but the store was out so I thing I used Gala) Salt and pepper, I also haven't gotten out the bread cubes or cornstalk.
The recipe says to put 2 tbsp of "EVOO" and 4 tbsp of butter in a pan. When the butter melts add a sage leaf then chop and drop in this order onion - celery - apple and saute 5-6 minutes. Now me being me, I change all my recipes so after this step is where I changed it up. I couldn't find any poultry seasoning so I used most the same seasonings as the turkey. Sage, Lemon Pepper, Ground Mustard, Garlic Salt, and Parsley.
This is where I forget to take pictures. Add 8 cups of the cubed stuffing mix and 2-3 cups of chicken stalk until bread is moist but not soggy. Make sure you use muffin cups in case you have to doctor them like I did. I just put a piece of butter in the bottom of each cup then scoop the stuffing into the cups. Bake 10-15 minutes.
I put 3 stalks of celery cut into smaller pieces into the cavity then bake the turkey in 45 minute increments. I baste the turkey at each 45 min. At one point I did not have much for drippings so I poured chicken stock over the bird.
Here is the bird after 2 hours. This is where we added the BACON! yes....I said bacon :) I just covered the bird with bacon and broiled for 20 minutes.
Sorry for the poor quality of the photo - it is from my phone. This is the finished bird covered in bacon. It added a smokey flavor to the bird and it kept the meat very moist and flavorful.
This is Patrick's plate of food. He did not have any of my candied yams. I don't know why people hate candied yams so much they are amazing. Here are my recipes for the foods we didn't get pictures of with exception to the green bean casserole which my mom made.
1) Deviled Curry Eggs
4 Boiled Eggs
Curry
Italian Seasoning
Mayonnaise
Mustard
Katsup
Paprika
Parsley
Half your eggs, and put the yolks into a bowl. Add Mayo until the desired consistency. I leave mine a little dry because I like to use wet mustard, and I like the filling to have yolk chunks. I season everything to taste but these are rough guesses of how much of each seasoning I use. 1/2 tsp mustard, 1/4 tsp katsup, 1/4 tsp curry and 1/4 tsp italian seasoning. Mix well. Once you fill the boiled whites with the mix. Garnish with paprika and parsley.
2) Candied Yams
1 BIG can of yams
Butter
Cinnamon
Nutmeg
Brown Sugar
Marshmallows
Raisins (optional)
Again I rarely measure so these are guesses. Drain the yams and pour into baking pan. I used my 9x9 square glass dish. Put chunks of butter over the yams, then 1/4 cup brown sugar sprinkled over yams. As well as 1 Tblsp Cinnamon and 1/2 tsp nutmeg. Sprinkle with raisins if desired and cover with marshmallows. I baked these in my convention oven for 10 minutes at 350.
My husband makes the mashed potatoes so I have no idea what is in them ;)

I also prepped my onion and garlic ahead of time, since these are just going in the cavity, I just quartered the onion, and left the garlic cloves (3) whole.
Meet Hank (haha Hanks Giving - Thanks "New Girl") It's a 5-6 lb Turkey Breast. I chose this because of the way we were cooking it, as well as it being already prepared - no guts to remove :)
Coat both sides with olive oil, and massage on. Remember cook with love, and it will taste 10 times better.
Here I am massaging on the seasoning. When we ate, my mom was amazed that I rubbed it on top of the skin and not under. It is up to you if you want to rub it under. Most of the time when I roast bird with the skin on, I put some butter and the seasoning under the skin so it keeps the flavor in.
Next stuff the cavity with the onion and garlic. I put the lid on the pan, and refrigerated over night.

We are doing our first Thanksgiving on our own this year. My mom and sister are coming over to have dinner with us. I hope everything goes well. My goal for this event is to document dinner prep for my youtube channel! (Poor channel only has 2 videos LOL) I will keep you all updated on how it goes!
